Unstuffed Peppers

What you need:

+ 1 Tbsp. vegetable oil
+ 1/2 lb. ground turkey
+ 1 medium onion, chopped (about 1/2-c.)
+ 1/2 tsp. dried basil leaves, crushed
+ 2 c. V8® 100% Vegetable juice
+ 1/2 c. uncooked long grain white rice
+ 2 medium green peppers, cut into 1-in. pieces (about 2-c.)
What to do:
1. Heat the oil in a 10-in. skillet over medium heat. Add the turkey, onion and basil and cook until the turkey is browned, stirring often to separate the meat. Pour off any fat.
2. Stir the juice and rice in the skillet. Heat to a boil. Reduce the heat to low. Cover and cook for 10 min. Stir the peppers in the skillet. Cover and cook for 10 min. or until the rice is tender and most of the liquid is absorbed.
