Southwestern Chicken Salad Sliders

These bite sized sandwiches are fun and easy to make, and are a definite crowd pleaser. Prep Time: 20 Min. Cook Time: n/a Chill Time: 1 Hr. What you need:

+ 1 precooked rotisserie chicken, deboned and coarsely chopped
+ 1 bunch green onions, chopped + 1 c. frozen corn, thawed + 1 c. cherry tomatoes, halved + 2 HASS AVOCADOS FROM MEXICO + 1/2 c. sour cream + 1/2 c. mayonnaise + 1/2 tsp. garlic salt + 12 bakery rolls, for sandwiches What to do:
1. In a large bowl, combine chicken, green onions, corn, sour cream, mayonnaise and garlic salt. Mix thoroughly.
2. Cube 1 1/2 Hass Avocados from Mexico, slice remaining 1/2 of avocado. Gently fold avocados into the chicken mixture, and season with salt and pepper. 3. Chill in the refrigerator 1 hr. 4. To serve, slice dinner rolls in half. Fill with chicken salad and top with Hass Avocado slices. |
